Guilt Free Carrot Loaf
Ingredients:
150g Self raising wheatmeal flour
2g Cinnamon
125g Caster sugar
2 Eggs
125 mL Canola oil
5 mL Vanilla essence
140g Finely grated carrot
100g Sultanas
60g Walnuts, chopped
Method:
1. Combine all dry ingredients.
2. Add beaten eggs and oil.
3. Stir in carrot, sultanas and nuts.
4. Spread evenly in greased and lined loaf tin and bake at 1800 C for 1 hour.
Summer Fruit Cheesecake
Ingredients:
1 ½ cups (250g) Oatmeal biscuit crumbs
90g Canola margarine
1 ½ tablespoon Gelatine
2 tablespoon Hot water
200g Low fat fruit yogurt
250g Low fat pineapple cottage cheese
3 tablespoon Honey
½ teaspoon Vanilla essence
1 cup of chopped fresh fruit in season (eg. apple, orange, rockmelon, strawberries, grapes)
Method:
1. Combine biscuit crumbs and melted margarine in a bowl. Press into a 23 cm spring form or pie dish. Bake in a 1800C oven for 10 min. Cool
2. Dissolve gelatine in hot water. Cool a little.
3. In a blender or food processor combine the yogurt, cottage cheese, honey, gelatine mixture and vanilla essence.
4. Place the mixed chopped fresh fruit in the cooled crumb crust (leave some of the fruit for decoration).
5. Pour the yogurt mixture over the fruit.
6. Chill in the refrigerator for about an hour to set. Decorate with remainder fruit mix before serving.
Banana and Honey Smoothie
A Low fat, low GI after school boost that is packed with nutrients that both parents and kids can enjoy.
Ingredients:
1 large Ripe banana
250 mL Chilled skim milk
150 mL Chilled evaporated skim milk
2 teaspoons Honey
A dash of Vanilla essence
Method:
Peel and roughly chop the banana. Combine with other ingredients in a blender and process until smooth and thick. Serve immediately.
Apple Oat Muffins
Ingredients:
½ cup Bran cereal
165 mL Skim milk
½ cup (75g) Self raising flour
2 teaspoon Baking powder
1 teaspoon Mixed spice
½ cup (75g) unprocessed bran
½ cup (80 g) Sultanas
1 green apple peeled and diced
1 Egg, lightly beaten
¼ cup (60 mL) Honey
½ teaspoon Vanilla essence
Methods:
1. Combine cereal and milk in a bowl and let stand for 10 minutes.
2. Sift flour, baking powder and mixed spice into a bowl. Stir in the oat bran, sultanas and apple.
3. Combine the egg, honey and vanilla. Add the egg mixture and cereal mixture to the dry ingredients and stir with a wooden spoon until just combined. Do not over-mix.
4. Spoon the mixture into greased muffin trays. Bake in oven at 180 C for 15 min until lightly brown.
5. Serve warm or refrigerate in an airtight container.
