Perfect Protein Salad
Ingredients
3/4 cup of cooked or canned soybeans
3/4 cup cooked or canned rye
Marinade:
Salt and Pepper
1 teaspoon fresh fennel or dill
1/4 teaspoon mustard
1/2 cup balsamic viniger
1/2 low fat mayonnaise
juice of 1 lime (or lemmon)
Bash of dry basil
2 table spoon dry white wine
1/2 cup freshly-chopped parsley
2 cloves crushed garlic
Veggies:
1 carrot, diced
1 cucumber, diced
1 red onion, diced
1 capsicum, diced
1 stalk of celery, diced
1 cup of low fat cottage cheese
fresh alfalfa sprouts for serving
tomato chopped for garnish
Method:
1. Mix the soybeans and rye in the marinade and refrigerate.
2. Chop the veggies.
3. Combine everything together with the cottage cheese
4. Top with alfalfa sprouts and chopped tomato.
5. Enjoy!!
